The dinner after dinner

I've been trying to catch up with Hairy Legs for a while, and totally missed the chance to have a few drinks with him for him birthday last week. As I stayed away from the parties in Singapore earlier this week, that also meant I didn't run into him there. So... here I was, sitting at home after having a very light dinner that Foursheets cooked us. Hairy Legs pinged me and asked me if I wanted to head over to have a few drinks. So... as dinner service was winding down, I found myself at Caprice.

We started with a little cheese, with the usual suspects like Comté and Mimolette.

Hairy Legs then asked whether I wanted something else... like beer batter fish and chips with tartar sauce. SERIOUSLY?! At a fine dining French restaurant with 3 Michelin stars?! Well, they do have a bar attached, so it's on the bar menu. And he tells me that they use John Dory...

But this wasn't quite to my liking. While the outer half of the batter was very crispy just as it should be, the inner half was not cooked through... and was mushy. Fish itself was fine, though.

Gotta have them chips, too! And they serve these up with Alain Millet ketchup! Really awesome!

I didn't really need dessert but they brought us the chocolate with hazelnut and liquid chocolate caramel.

But tonight the focus was all about 2 bottles of Champagne:

1981 Taittinger Collection - nose was the more toasty of the pair, almost coffee-like. Initially we thought this was un petit bouchonée but in the end we thought it was just closed. Good acidity on the palate. This turned really nice after it opened up some 30 minutes in, with caramel on the nose.

1981 Taittinger Comte de Champagne Blanc de Blancs - nose of marmalade, a little flinty, Chinese salted plum with that savory profile, got a little more oxidized. Very lovely.

These two made a very nice pair.

1994 d'Yquem, en imperial - opened for about a week. Tons of acetone, definitely some saffron. Good sweetness on the palate but still got the acidity.

It's been too long, and it's always fun to do this with Hairy Legs. Let's hope the next session doesn't take another 6 months...
